Healthy Banana Bread (Paleo & Vegan)

This naturally sweetened banana bread will have you singing into your whisk like a microphone. It is soft, sweet, and can be extremely versatile with what goes in the batter. Nuts, chocolate chips, berries, anything!


yields: 8-9 pieces

prep time: 10 minutes

cook time: 60 minutes

total time: 1 hr 10 min


3 medium ripe bananas

1 tsp vanilla

2 flax eggs (2 tbsp ground flax seed, 1/3 cup water, stir and let sit for 10 minutes)

1/4 cup maple syrup

2/3 cup buckwheat flour (can sub whole-wheat flour if not gluten free)

1 cup almond flour

1 tsp cinnamon

1/2 tsp salt

1 tsp baking soda

(Optional) 1/2 cup mini chocolate chips, walnuts, or berries


  1. Preheat oven to 350 F and grease a loaf pan

  2. In a large bowl mash together the bananas, vanilla, flax eggs, and maple syrup

  3. Then add in the buckwheat flour, almond flour, cinnamon, salt, and baking soda. Then stir in the chocolate chips/walnuts/or both

  4. Pour the batter into the loaf pan and bake in the oven for 55 minutes to an hour. Let cool for 20 minutes, slice, and enjoy!!


-haven't tested other options that buckwheat flour, but wholewheat is a 1:1 alternative for that

-can add any add-ins you wish

-I used mini chocolate chips in these photos

-keep in an air-tight container, stays good for around 5 days room temp or in fridge/put in the freezer for up to a month
