extremely fluffy, flavorful, and absolutely delectable. i give you full permission to stare and take in every inch that this beautiful loaf has to offer:)
THE RECIPE:
yields: 7-9 slices
prep time: 10 min
cook time: 1 hour
total time (including cooling): 1 hr 30 min
ingredients
3 mashed bananas
1/4 cup melted coconut oil
1/3 cup almond butter (can sub other nut or seed butter)
1/3 cup coconut sugar
1 tsp vanilla
1/4 cup + 2 tbsp non dairy milk
1 3/4 gf oat flour (1 3/4 cup finely blended gf oats)
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
1 1/2 tsp matcha powder
instructions
*preheat the oven to 350 F and line a loaf pan with parchment paper, set aside
*in a large bowl, mix together the mashed bananas, coconut oil, almond butter, coconut sugar, vanilla, and non dairy milk. then mix in the oat flour, baking powder, baking soda, and salt until smooth. then add in the chocolate chips
*split half of the batter into a separate bowl and add the matcha powder to that half. alternatively pour portions of the batter (switching from plain to matcha between each pour) into the center of the lined loaf pan until both bowls are used up (you should alternatively use each flavor about 3-4 times), sprinkle with extra choc chips, and bake in the oven for about 1 hour. let cool for 20-25 minutes, slice into 9 ish pieces, + enjoy!
