These bars are extremely simple, vegan, gf, refined sugar free, and taste like the chewiest oatmeal choc chip cookie ever! The dark chocolate in them complements the salt perfectly and the edges get all nice and golden brownnn
These cookie bars are 10/10. I cannot express how amazing these are. They give me flashbacks to way before I was into healthy baking, or baking at all, to when one of my best friend Ryan's mom would make these healthy dark chocolate oatmeal cookies with sea salt.
These cookies were extremely chewy and had dark chocolate and rich seas salt melting out the sides. I took a bite of one of these bars, and it was like I was back in 2015, in my Ryan's kitchen with all my best friends. Those were the days.
THE RECIPE:
yields: 9 bars
prep time: 10 minutes
cook time: 20 minutes
total time (including cooling): 45 minutes
Ingredients:
1 flax egg
1/3 cup melted coconut oil
1/4 cup creamy peanut butter (can sub other nut butter)
1/2 cup coconut sugar
1 tsp vanilla
2 1/2 tbsp maple syrup
1 cup gf rolled oats
1 cup gf oat flour (1 cup blended gf oats)
1 tsp baking soda
1 tsp salt
1/2 cup dark chocolate chips
Instructions:
1. Preheat oven to 350 F and spray an 8x8 baking tray
2. In a medium bowl combine the flax egg, coconut oil, peanut butter, coconut sugar, vanilla, and maple syrup
3. Then add in the rolled oats, oat flour, baking soda and salt. Then combine with the chocolate chips
4. Spread the batter evenly into the tray and bake in the oven for 17-20 minutes. Sprinkle with some sea salt and more chocolate chips, let cool for 15, cut into 9 squares, and enjoy!!
