Paleo Tiramisu (Vegan & Healthy)
Light, creamy, TASTING LIKE THE REAL THING. This tiramisu is definitely something I can get behind and preach for :) AKA make this and your friends will 1. Think you're a chef and 2. Not even know it's healthy
Don't be alarmed, they are super simple and the perfect base for the coconut cream
Light, airy, and only 2 ingedients!! We love a simple recipe that makes you seem like a chef.
Do you ever have that one, open, half-used can of coconut milk in your fridge that you just don't know what to use it for? Well, me too. So thankfully in this recipe, you use the whole can, none wasted! The milk and the cream!!

cook time: 15 minutes
chill time: 7 hours
active time: 35 minutes
Ingredients: For the ladyfingers- 3 eggs 3/4 cup coconut flour 3 tbsp coconut sugar 1/2 tsp vanilla 1/2 tsp baking soda 1/4 cup coconut milk (from your can of coconut cream) 1/2 cup expresso For the coconut cream- 1 can of coconut cream 1/4 cup coconut sugar And some cacao powder for sifting on top
Instructions: 1. Preheat oven to 350. Line a baking sheet with parchment or grease it. 2. In a medium bowl mix together the eggs, coconut flour, coconut sugar, vanilla, baking soda, and coconut milk. Roll in 3 inch long cookies (1/2 an inch in thickness), place on your baking sheet, bake for 13-15 minutes and let cool for 15 3. In a small bowl put the rest of the cream and milk from the can of coconut cream and whisk it with the coconut sugar until smooth 4. Get an 8x8 (or smaller) pan and quickly dip half of the lady fingers into the coffee, then place them in the pan. Spread half the coconut cream mixture over this and repeat this process once more. (Layers go ladyfingers, cream, ladyfingers, cream) 5. Place in the fridge overnight or for 6-8 hours and sift 2-3 tbsp of cacao powder, slice into squares and enjoy!!
