Healthy Red and Blue Berry White Chocolate Chip Cookies (vegan + gf)

A mouthwatering treat that you can bring to any holiday party that you're forced to go to this year:)


They're extremely flavorful with richness from the white chocolate and freshness from the rasp and blueberries, I'm in love!




THE RECIPE:

yields: 12 cookies

prep time: 10 min

cook time: 15 min

total time (including cooling): 35 min

ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1/4 cup nut or seed butter (i recommend cashew, almond, or sunflower)

1/2 cup coconut sugar

1 tsp vanilla

1 cup almond flour

2 tbsp coconut flour

1 tsp baking soda

1/2 tsp salt

1/2 cup white chocolate chips (I use Dee Best Vegan White Choc Chips from amazon)

1/4 cup fresh raspberries

1/4 cup blueberries (fresh or frozen)

*preheat oven to 350 F and line or grease a cookie sheet

instructions

*in a large bowl mix together the flax egg, coconut oil, nut or seed butter, coconut sugar, and vanilla

*add in the almond flour, coconut flour, baking soda, and salt. then stir in white chocolate chips until smooth

*place the dough evenly onto the cookie sheet, and then slightly break up the raspberries and press them into each cookie. then press a few whole blueberries into each cookie, bake for 15-17 min, let cool for 10, and enjoy!
