Salted Caramel Chip Cookies (vegan + gf)

chewy and sweet, with the perfect salt sprinkle




THE RECIPE:

yields 8 cookies

prep time: 10 min

cook time: 18 min

total time (including cooling): 38 min

ingredients

5 tbsp oil (olive or melted coconut)

1/4 cup nut or seed butter

2 tbsp maple syrup

1/2 cup coconut sugar

1/2 tsp vanilla

3/4 cup almond flour

1/4 tsp baking powder

1/2 tsp salt

2/3 cup caramel baking chips

sea salt (for sprinkling)

instructions

1. Preheat oven to 325 F and line or grease a cookie sheet, set aside

2. In a large bowl mix together the oil, nut butter, maple syrup, coconut sugar, and vanilla

3. Mix in the almond flour, baking powder, and salt. Then mix in the caramel baking chips. Form 8 cookie shapes on the cookie sheet and bake at 325 F for 13 minutes, then raise the heat to 350 F and cook for 5 min. Let cool for 10, sprinkle with sea salt, and enjoy!
