Single Serve Apple Cinnamon Pop Tart (vegan, gf, nut free, + air fryer opt)

the perfect treat for someone with an intense craving for smth sweet + no time or patience🤞🏻

this poptart is crisp on the outside and slightly soft and sweet on the inside:)

it tastes like a mini apple pie that can be made in literally 15 mins and uses minimal ingredients

yields: 1 tart

prep time: 10 min

cook time: 11 min

total time (including cooling): 22 min

for the dough-

1 tbsp nut or seed butter

2 tbsp maple syrup

a dash of vanilla

2 tbsp non dairy milk

1 tbsp apple sauce

a pinch of salt

a pinch of baking soda

a pinch of baking powder

1/4 tsp cinnamon

1/3 cup gf oat flour (1/3 cup blended gf oats)

2 tbsp coconut flour

for the filling-

1/4 medium apple (chopped into medium chunks)

1/2 tbsp coconut sugar (can sub other sweetener)

a few dashes cinnamon

for the icing-

1/2 tbsp nut or seed butter (i prefer cashew or almond)

1 tsp maple syrup

1/2 tbsp non dairy milk

*preheat oven to 350 F or prepare air fryer and grease a piece of aluminum foil, set aside

*for the dough- in a small bowl mix together the nut/seed butter, maple syrup, vanilla, non dairy milk, and apple sauce. then mix in the salt, baking soda, baking powder, cinnamon, oat flour, and coconut flour. either roll out the dough on a floured surface and cut into two rectangles or split the dough into two and form the rectangles with your hands.

*for the filling- mix together the chopped apple, coconut sugar, and cinnamon and microwave for 30 seconds. pour the mixture into the center of one of the rectangles (leaving about an inch clear on the sides). place the other rectangle on top of the first one and use a fork to press the sides together. bake in the oven/air fryer for 11-12 min.

*for the frosting- mix together the nut/seed butter, maple syrup, and non dairy milk then spread over the pop tart, optionally add more cinnamon, and enjoy!
