Vegan Gluten Free Chocolate Chip Cookies (nut free)

These Vegan Gluten Free Chocolate Chip Cookies are extremely fluffy and delicious!!




THE RECIPE: yields: 16-18 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min

Ingredients:

1 chia egg (1 tbsp chia seeds + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup solid coconut oil

1 1/2 tsp vanilla

1/2 cup coconut sugar (can sub brown sugar)

1/4 cup white sugar (can sub more coconut sugar/other sugar)

2 tbsp non dairy milk

1 cup + 2 tbsp gluten free all purpose flour (can sub normal all purpose flour)

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

Instructions:

1. Preheat the oven to 350 F and prepare two baking sheets, set aside

2. In a large bowl mix together the egg, coconut oil, vanilla, coconut sugar, white sugar, and non dairy milk

3. Mix in the gf all purpose flour, baking soda, baking powder, and salt until combined

4. Add in the chocolate chips and with a small/medium cookie scoop, place the dough onto the cookie sheets (recipe makes 16-18) and bake for 10-13 minutes, let cool for 10, and enjoy!
