Bell Pepper Chickpea Pasta (vegan + gluten free)

one of my fav recipes that i make every week, super simple and flavorful!



THE RECIPE:

yields abt 4 servings

prep time: 10 min

cook time: 12 min

total time (including cooling): 22 min

ingredients

1 box chickpea pasta (can use any gluten free pasta, or not gf if that doesn’t apply to u)

3 tbsp olive oil

1 large orange bell pepper

1 large tomato

1 medium/large zucchini

large sprinkles of garlic powder, salt, and pepper

1/2 can chickpeas (drained and rinsed)

abt 3 tbsp nutritional yeast

(+ extra olive oil, spices, and nutritional yeast to taste)

instructions

*prepare your pasta as labeled on the package and set aside

*heat the olive oil in a pan over medium heat and chop the bell pepper, tomato, and zucchini into small pieces. add the veggies to the pan and season with the garlic powder, salt, and pepper. let the veggies cook on medium heat for 6-7 min, stirring occasionally

*add in the chickpeas and nutritional yeast and return to a simmer for another 5-6 min, stirring occasionally

*pour the veggie mixture into your pasta and season with olive oil, spices, and nutritional yeast to taste. top with extra nutritional yeast and enjoy!
