Chia Jam Bites (vegan, paleo, no bake, + nut free)

another easy and delish snack/healthy dessert!




THE RECIPE:

yields abt 8 bites

prep time: 10 min

freeze time: 1 hr and 30 min

total time (including cooling): 1 hr and 40 min

ingredients

1/3 cup chocolate chips

1/2 tbsp coconut oil

1/2 cup washed berries (i used blackberries)

2 tbsp chia seeds

1 1/2 tbsp maple syrup

instructions

1. in a small bowl, finely mash the berries then stir in the chia seeds and maple syrup. place them in clumps on a parchment lined plate and put in the freezer until set (abt 1 + 1/2 half hrs)

2. melt together the chocolate chips and coconut oil in the microwave in 30 sec increments, mixing in between, until smooth. then peel the bites off the parchment and dip them one by one into the chocolate, covering them completely, and using a fork to tap the excess off, then put back on the parchment. the chocolate will start to harden, but place in freezer if needed and enjoy! (best stored in fridge)
