Caramel Almond Protein Mini Muffins (vegan + gf)

They’re fluffy, soft, and have a rich caramel flavor that’s to DIE for!




THE RECIPE:

yields: 17-20 mini muffins

prep time: 10 min

cook time: 20 min

total time (including cooling): 45 min

Ingredients:

2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 10 min)

1/4 cup melted coconut oil

1/2 tsp vanilla

1/4 cup coconut sugar

2 tbsp maple syrup

1/4 cup non dairy milk

1/3 cup almond butter

1 cup almond flour

1/3 cup @unicornsuperfoods caramel slice protein powder

1 tsp baking soda

1/2 tsp salt

1/4 cup chocolate chips (optional, for topping)

Instructions:

1. Preheat oven to 350 F and line or grease a mini muffin tin, set aside

2. In a large bowl mix together the flax eggs, melted coconut oil, vanilla, coconut sugar, maple syrup, non dairy milk, and almond butter

3. Then add in the almond flour, protein powder, baking soda and salt

4. Scoop the batter into the mini muffin tin and place a few chocolate chips on top, bake in the oven for 20 min, let cool for 15, and enjoy!
