Cashew Chocolate Chip Cookies (Paleo & Vegan)

These cashew cookies are DIVINEđź‘Ź They have a nice chewy crunch & are so sweet & rich from the cashew butter and chocolate chips!




THE RECIPE yields: 16-18 cookies

prep time: 10 minutes

cook time: 13 minutes

total time (including cooling): 33 minutes

Ingredients:

1 flax egg (1 tbsp ground flax + 2.5 tbsp water, mix, & let sit for 15 minutes)

1/4 cup melted coconut oil

1/3 cup cashew butter

1/2 cup coconut sugar

1 tsp vanilla

1 cup almond flour

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips

1/3 cup crushed cashews

Instructions:

1. Preheat oven to 350 F and line or grease two baking sheets, set aside

2. In a large bowl mix together the flax egg, coconut oil, cashew butter, coconut sugar, and vanilla

3. Add in the almond flour, baking soda, and salt. Then stir in the chocolate chips and cashews

4. Spoon the batter onto the cookie sheets (recipe makes 16-18) and bake in the oven for 13 minutes, let cool for 10, and enjoy!!
