Chocolate Chip Muffins (vegan + gf)

fluffy muffins filled with melty chocolate chips



moist, simple, and perfect for a sweet breakfast or a quick snack🍫



THE RECIPE:

yields 12 muffins

prep time: 10 min

cook time: 22 min

total time (including cooling): 42 min

ingredients

2 flax eggs (2 tbsp ground flaxseed/whole chia seeds + 5 tbsp water, mix, and let sit for 5 min)

1/3 cup melted coconut oil

1 tsp vanilla

1/2 cup coconut sugar

1 tbsp maple syrup

1/3 cup apple sauce

6 tbsp non dairy milk

1 cup gf oat flour (1 1/2 cup blended gf oats)

3/4 cup almond flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and grease a mini muffin tin, set aside

*in a large bowl mix together the flax/chia egg, coconut oil, vanilla, coconut sugar, maple syrup, and apple sauce until combined

*then add in the oat flour, tapioca starch, baking powder, baking soda, and salt. then mix in the chocolate chips

*divide the batter evenly amongst the tins and bake in the oven for 22-24 mins, let cool for 10 min, and enjoy!
