Chocolate Chip Peanut Butter Cup Cookies (vegan + paleo opt)

These Chocolate Chip Peanut Butter Cup Stuffed Cookies are insaneee

THE RECIPE yields: 8-10 cookies (depending on the size of the pb cups)

prep time: 10 mins

cook time: 15 mins

total time (including cooling): 35 mins

Ingredients:

1 flax egg

1/4 cup melted coconut oil

1 tsp vanilla

1/2 cup coconut sugar

2 tbsp maple syrup

1 1/2 cups almond flour

1 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

8 ish peanut butter cups ( I like@lilysweets@unreal.snacks) (use almond butter cups for paleo)

Instructions:

1. Preheat oven to 350 and a line or grease a baking tray, set aside

2. In a large bowl mix together the flax egg, coconut oil, vanilla, coconut sugar, and maple syrup

3. Add in the almond flour, baking powder, and salt. Then stir in the chocolate chips

4. Using a small/medium cooking scoop, a ball of the dough (it will be gooey), take half of that ball and place a pb cup in the middle, then cover the top with the rest of the dough. Place in the oven and bake for 14 to 17 minutes, let cool for 10 and enjoy!
