Chocolate Peanut Butter Heart Cookies (vegan, gluten free, + small batch)

extremely tasty and adorable<3


yields 8 cookies

prep time: 15 min

cook time: 9 min

total time (including cooling): 25 min


for the cookies-

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup maple syrup

2 tbsp coconut sugar

1/2 tsp vanilla

1 cup gf oat flour (1 cup blended gf oats)

1/3 cup cacao/cocoa powder

2 tbsp tapioca starch/flour or arrowroot starch

1/2 tsp baking powder

1/2 tsp salt

for the heart-

abt 2 tbsp peanut butter


*preheat oven to 350 F and line or grease a cookie sheet

*for the cookies- in a medium bowl mix together the flax egg, maple syrup, coconut sugar, and vanilla. then add in the oat flour, cacao powder, tapioca flour, baking powder, and salt

*roll the dough into 8 evenly sized balls and flatten into a cookie shape with your hands (they will not spread.) using the back of a butter knife/utensil press two diagonal lines into the cookies to make a heart. bake in the oven for 9 min

*for the heart- once the cookies are out of the oven, use a spoon to place a small amount of peanut butter (abt 1-2 tsp each) into each heart and spread it until it fills the heart. let cool for a few min and enjoy!
