inspired by a life changing salad I had with my mom the other day and I just had to recreate it
THE RECIPE:
yields: 1-2 servings (abt 1 chicken breast per person)
prep time: 10 min
cook time: 10 min
total time (including cooling): 20 min
ingredients -1 chicken breast (or as many as you need per person) -mix of spices (chili powder, salt, pepper, garlic powder, paprika, onion powder, and a tbsp olive oil) -for the salad (eyeball measurements for spring mix, chopped romaine, nuts (i used pistachios), corn, and cilantro lime dressing (mine was from @traderjoes )
instructions 1. Press down chicken breast with fork a few times to tenderize 2. Cover the chicken in the spices and olive oil, then cook in a pan on medium-high heat for 4-5 minutes each side. Then transfer to a oven-safe dish and bake in the oven at 350 F until internal temperature reaches 165 F 3. Mix together spring mix, chopped romaine, nuts, corn, and cilantro dressing. Top with sliced chicken and enjoy!
