Parmesan Crusted Chicken Salad (savory + gf)
fresh lettuce, with zesty dressing, and salty, crispy chicken slices

ingredients 2 tenderized chicken breasts 1 egg (mix with fork) chicken “breading” (a combination of abt 1/3 cup parmesan crisps, a little salt, pepper, cumin, chili powder, onion powder, and garlic powder blended together in a food processor) 1 tbsp olive oil chopped romaine lettuce chopped pistachios dressing of choice (i used the cilantro lime dressing from @traderjoes )
instructions 1. put the chicken breading in a flat bowl, then in another flat bowl put the mixed egg. put a pan on medium-high heat with the olive oil in it and set aside. coat both sides of the chicken in the egg mixture, then in the breading then place it in the pan and cook for 4-5 minutes on each side (until internal temperature reaches 165 F) 2. chop the chicken, romaine, and pistachios and add to two bowls. combine with the dressing and enjoy!
