cakey chocolatey cookies filled w rich tones of coffee that bring out the delectable chocolate flavor, all topped w dreamy a caramel drizzle

i can’t even describe how amazing these cookies taste, the flavors balance each other out perfectly, and i’m honestly drooling just thinking about them
they’re also the perfect breakfast/snack pick-me-up with some caffeine to help keep ya going


THE RECIPE:
yields abt 17-18 cookies
prep time: 15 min
cook time: 12 min
total time (including cooling): 37 min
ingredients
for the cookies-
1/4 cup melted coconut oil
1/2 cup coconut sugar
1/4 cup creamy nut or seed butter
1/3 cup brewed @chamberlaincoffee coffee (i used their espresso but you could use any kind you like!)
1 tsp vanilla
1 1/2 cup almond flour
1/3 cup cacao powder
1 tbsp coconut flour
1/2 tsp salt
1 tsp baking soda
1 tsp maca powder (optional but adds to the caramel flavor)
1/2 cup chocolate chips
for the caramel-
2 tbsp creamy nut or seed butter
2 tbsp maple syrup
1 tbsp non dairy milk
instructions
*preheat oven to 350 F and line or grease two cookie sheets, set aside
*for the cookies- in a large bowl mix together the coconut oil, coconut sugar, nut or seed butter, coffee, and vanilla
*add in the almond flour, cacao powder, coconut flour, salt, baking soda, and maca powder. then add in the chocolate chips
*using a small/medium cookie scoop, place the dough evenly onto the baking sheet, bake for 12 min, and let cool for 10
*for the caramel- mix together the nut or seed butter, maple syrup, and non dairy milk until completely smooth, drizzle over the cookies, and enjoy!
