Thanks so much to @eatnudge (on insta) for sending me some of their really cool coffee inspired products to try! I used the coffee bars for this one, but they also have coffee butter, and coffee candy balls!
THE RECIPE
yields: 8/9 brownies
prep time: 10 min
cook time: 30 min
total time (including cooling): 40 min
Ingredients:
2 flax eggs (2 tbsp ground flax + 5 tbsp weather, mix, & let sit for 15 min)
3 tbsp melted coconut oil
2 @eatnudge coffee bars (can sub normal chocolate bars)
1 tsp vanilla
1/2 cup coconut sugar
3 tbsp almond butter
1/4 cup soy milk (sub for coffee if omitting the coffee bars for chocolate)
2/3 cup coconut flour
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking soda
1/3 cup chocolate chips
A handful of cacao nibs
Optional topping: 1 nudge coffee bar/ 1 chocolate bar/ 1/2 cup chocolate chips
Instructions:
1. Preheat oven to 350 and grease an 8x8 square pan
2. In a large bowl mix together the flax eggs, coconut oil, coffee bars, vanilla, coconut sugar, almond butter, and soy milk
3. Add in the coconut flour, salt, cinnamon, and baking soda. Then add in the chocolate chips and cacao nibs.
4. Pour the batter into the pan and bake for 29-31 minutes, let cool for 15, optionally melt the extra coffee/ chocolate bar on top, and slice into 8/9 bars, enjoy!
