these are perfect for people who like things a little less sweet, but still want a nice treat! also def top them with a bit (or a lot:)) more almond butter + a pinch of sea salt for good measure



THE RECIPE:
yields: 8 scones
prep time: 10 min
cook time: 15 min
total time (including cooling): 35 min
ingredients:
6 medjool dates (pitted, soaked in warm water for 5 min, and drained)
1/4 cup melted coconut oil
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5-10 min)
1/4 cup almond butter
1 tsp vanilla
1 cup almond flour
1/4 cup coconut flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
instructions:
*preheat oven to 350 F and line or grease a baking sheet
*blend soaked and drained dates until smooth (or as smooth as possible they should turn into a paste, if your blender/food processor can’t do it, thoroughly mash them with a fork) then add them into a large bowl
*add the coconut oil, flax egg, almond butter, and vanilla into the bowl (with the dates) and mix until smooth
*add in the almond flour, coconut flour, baking powder, baking soda, and salt
*with your hands, clump the dough together and mold it into a flattened (about 2 inch thick) circle and place it onto the baking sheet. using a sharp knife, cut the disc into 4 sections and then diagonally until you have 6 scone triangles and separate from each other on the sheet.
*bake in the oven for 14-15 mins, let cool for 10, and enjoy (preferably with some almond butter + salt sprinkled on top)
