Double Chocolate Chip Cashew Bars (vegan + paleo)

These are chewy, soft, and crisp all in one, they’re literally the chocolatey, cashewy bars of your dreams :)





THE RECIPE:

yields: 12 bars

prep time: 10 min

cook time: 28 min

total time (including cooling): 53 min

Ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 5-10 min)

2 tbsp coconut oil (melted with 1/3 cup chocolate in 30 second increments, mixing in between, until smooth)

1/2 cup cashew butter

1/3 cup coconut sugar

3 tbsp maple syrup

1 tsp vanilla

3 tbsp non dairy milk

1 cup almond flour

2 tbsp cacao/cocoa powder

1/2 tsp salt

1 tsp baking soda

1/2 cup chocolate chips

1/4-1/3 cup chopped cashews

Instructions:

1. Line or grease an 8x8 baking dish and preheat oven to 350 F, set aside

2. In a large bowl mix together the flax egg, coconut oil melted chocolate mixture, cashew butter, coconut sugar, maple syrup, non dairy milk, and vanilla

3. Then add in the almond flour, cacao powder, salt, and baking soda. Then stir in the chocolate chips and cashews

4. Spread the mixture into the tin and bake for 28 mins, let cool for 15, chop into 12 slices, and enjoy!
