Double Chocolate Oatmeal Cookies (Gluten free + vegan)

These DOUBLE CHOCOLATE OATMEAL COOKIES are extremely fudgy with a nice soft, crackly top, vegan, gluten free, and nut free!


yields: 23 cookies

prep time: 10 minutes

cook time: 15 minutes

total time (including cooling): 40 minutes


1/4 cup coconut oil

1/2 cup chocolate chips

1 flax egg

1 1/2 tsp vanilla

1/2 cup coconut sugar

1/4 cup maple syrup

1 cup gf oat flour (1 cup blended gf oats)

1 cup gf oats

1 tsp baking soda

3 tbsp cocoa powder

1/2 tsp salt

1/2 cup chocolate chips


1. Preheat oven to 350 F and grease or line 2 baking sheets, set aside

2. In a large bowl melt together the coconut oil and chocolate chips in the microwave in 30 second increments, mixing in between until smooth. Then add in the flax egg, vanilla, coconut sugar, and maple syrup

3. Add in the oat flour, oats, baking soda, cocoa/cacao powder, and salt. Then add in the chocolate chips

4. Place the cookies with a small/medium cookie scoop onto the cookie sheets (recipe makes 23) and bake in the oven for 15-17 minutes, let cool for 10, and enjoy!!
