Healthy Chocolate Peanut Butter Cup Muffins (Gf & Vegan opt.)

These are the FLUFFIEST muffins with the most perfect taste & texture. I know I'm hyping them up a lot, but these are just so dang good and so simple!


I used to be absolutely obsessed with Reese's peanut butter cups when I was younger and they made me get such bad tummy aches, but once I found healthier alternatives (that actually tasted just as good & made me feel tons better!) I was HOOKED.







THE RECIPE

yields: 21-23 mini muffins

prep time: 10 minutes

cook time: 15 minutes

total time (including cooling): 30 minutes

Ingredients:

2 eggs (or flax eggs)

1/2 cup creamy peanut butter

1 tsp vanilla

1/4 cup melted coconut oil

1/2 cup coconut sugar

1 3/4 cup gf oat flour (1 3/4 cup blended oats)

1 tsp baking soda

1/2 tsp salt

5 chopped up peanut butter cups (I like to use the perfect bar ones, lily sweets, or unreal snacks)

1/4 cup extra chocolate chips (optional)

Instructions:

  1. Preheat oven to 350 degrees F and line a mini muffin tin with cupcake liners

  2. In a large bowl mix together the eggs, peanut butter, vanilla, melted coconut oil, and coconut sugar

  3. Add in the oat flour, baking soda, and salt. Then add in the chopped peanut butter cups and chocolate chips.

  4. Use a small cookie scoop and place 1 scoop of batter into each tin/use a tablespoon and place 1-2 tbsp of batter into each. Bake in the oven for 15 minutes, let cool for 5, and enjoy!!
