Oreo seems to have come out with about 400000000000 flavors by now and I can't have any of them... but why have a store-bought cookie that makes you feel crappy when you can eat a simple, homemade Oreo that's vegan, gluten free, and paleo if you use almond butter instead of peanut :)
And now for the glory shots of these bad boys...
THE RECIPE
yields: 10 cookies
prep time: 15 minutes
cook time: 10 minutes
total time: 25 minutes
Ingredients:
For the cookies:
3/4 cup chopped dark chocolate
1/4 cup coconut oil
1/4 cup maple syrup
1/4 cup coconut sugar
1/2 tsp vanilla
1 cup almond flour
1/3 cup coconut flour
1/4 cup cacao powder
1 tsp baking powder
1 tsp salt
Chocolate coating:
1/4 cup dark chocolate
1 tbsp coconut oil
For the filling:
5 tbsp peanut butter (almond butter for paleo)
Instructions:
1. Preheat oven to 350 and line a baking sheet with reusable parchment paper
2. In a large bowl melt together the chocolate and coconut oil in 30 second increments, then stir in the vanilla extract, maple syrup, and coconut sugar
3. Add in the almond flour, coconut flour, cacao powder, baking powder, and salt
4. Take about 1 tbsp of batter, roll in your hands, flatten into a small circle with your palms, and place onto the cookie sheet
5. Bake in the oven for 11-13 minutes and let cool for 10 Melt the chocolate and coconut oil together (for the chocolate coating) in 30 second increments and set aside
6. Take two cookies and place 1/2 tbsp of peanut butter in between the two, then dip half of each cookie into the chocolate mixture (you can also drizzle the cookies or dip in a full cookie if ya feeling crazy🤪)
7. Place in the freezer for 20 minutes to set and enjoy!! (Makes 10 cookies)
