Updated: Jul 1, 2020

These brownies are seriously fudgy and addictive. The perfect quarantine treat to bake for all your friends! I used @completeats (on instagram) superfood cookies for the addictive cookie dough chunks that make these brownies THAT good

Time for the glory shots, try not to drool on your screen :)

These brownies are so good, you can't even tell that they are healthy and packed with nutrient-dense superfoods! I'm seriously in love.

yields: 9-16 brownies (depending on how you cut)

prep time: 10 minutes

cook time: 35 minutes

total time: 45 minutes

3/4 cup coconut milk blended (or other non-dairy milk)

1/2 cup cashew butter (can sub other nut butter)

1/3 cup maple syrup

1/2 cup coconut sugar

1 tsp vanilla

1 1/2 cups almond flour

1/2 cup cacao powder

1 tsp baking soda

1 tsp salt

1/3 cup chocolate chips

3 large Completeats cookies chopped up in chunks (2 1/2 for the batter, 1/2 for the top)

A few more chocolate chips to top

  1. Preheat oven to 350 F and grease a 8x8 baking dish

  2. In a large bowl combine the coconut milk, cashew butter, maple syrup, coconut sugar, and vanilla until combined

  3. Add in the almond flour, cacao powder, baking soda, and salt. Stir in the chocolate chips and cookie chunks🙌
