Healthy Cookies and Cream Loaf (Gluten free & Vegan)

A loaf that tastes like a dang cookie. It is crumbly and creamy in all the right places, a definite YES in my book :)



Oat Flour. It is so simple and sooo versatile. I find it makes food more filling and gives them a denser feel. You can make this by simply blending up oats in a blender/food processor until smooth!



The white chocolate chips that I use can be found in the "Products" section in the top left of my website! I use the 365 brand!! These are sooo good and add the incredible creaminess to the loaf



THE RECIPE

yields: 7 pieces

prep time: 10 minutes

cook time: 40 minutes

total time: 55 minutes

Ingredients:

1 flax egg

1/3 cup almond butter

1 individual dairy free yogurt

1/4 cup soy milk

1/2 tsp vanilla

1/2 cup coconut sugar

1 cup gf oat flour

1 tsp baking powder

1/2 tsp salt

1/2 cup jet black cocoa (I used Hiit Nutrition)

1/3 cup white chocolate chips + a few more to sprinkle on top( vegan I’d preferred)

Instructions:

  1. Preheat oven to 350 and grease a loaf pan

  2. In a large bowl mix together the flax egg, almond butter, yogurt, soy milk, vanilla, and coconut sugar until smooth and combined

  3. Add in the oat flour, baking powder, salt, and cocoa. Then add in the chocolate chips

  4. Pour batter into a loaf pan, top with more white chocolate chips, bake in the oven for 37-40 minutes, let cool for 20, and enjoy!
