Healthy Double Chocolate Chip Peanut Butter Cookies (vegan + gf)

crisp on the outside, fudgy on the inside, and extremely chocolatey<3


like not to say these cookies will solve all your problems but they definitely will:)




THE RECIPE:

yields: 15 cookies

prep time: 10 min

cook time: 12 min

total time (including cooling): 32 min

ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix and let sit for 5 min)

1/4 cup melted coconut oil

1/2 cup creamy peanut butter

1/2 cup coconut sugar

2 tbsp maple syrup

2 tbsp non dairy milk

1 tsp vanilla

1 1/2 cup almond flour

1/3 cup cacao powder

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and line or grease a cookie sheet

*in a large bowl mix together the flax egg, coconut oil, creamy peanut butter, coconut sugar, maple syrup, non dairy milk, and vanilla

*add in the almond flour, cacao powder, baking soda, and salt. then mix in the chocolate chips

*using a small/medium cookie scoop, place the dough evenly onto the baking sheet, bake for 12 min, let cool for 10, and enjoy!
