a simple, insanely amazing and dare i say moist cake that u wouldn’t even know is vegan and gluten free!
whether it’s someone’s birthday or not, anytime is a good time for cake, especially if it’s this cake in particular:)

THE RECIPE:
yields: 8-12 slices
prep time: 20 min
cook time: 21 min
total time (including cooling): 1 hour
ingredients
for the cake-
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 5 min)
1/4 cup melted coconut oil
1/2 cup coconut sugar (can sub other granulated sweetener)
1/4 cup creamy nut or seed butter
1/4 cup maple syrup (can sub honey, date syrup, or other liquid sweetener)
1/3 cup + 2 tbsp non dairy milk
1 tsp vanilla
1 cup gf oat flour (1 cup blended gf oats)
1 cup almond flour
1/4 cup tapioca flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
for the frosting-
3/4 cup vegan butter (softened, i used @miyokoscreamery )
1 3/4 cup powdered sugar (can sub other powdered sweetener)
1 tsp vanilla
a sprinkle of salt
1/2 tbsp non dairy milk
sprinkles (for topping, optional but fun + yum;))
instructions
*preheat oven to 350 F and line and grease two 9 inch round cake pans, set aside
*for the cake- in a large bowl mix together coconut oil, flax eggs, coconut sugar, nut or seed butter, maple syrup, non dairy milk, and vanilla
*then add in the oat flour, almond flour, tapioca flour, baking soda, baking powder, and salt
*pour the batter into the pans and bake for 17-23 min, or until a toothpick comes out clean
*for the frosting- in a medium bowl with an electric mixer whip together the vegan butter, powdered sugar, vanilla, salt, and non dairy milk until completely smooth
*when the cake is completely cooled (around 20-30 min), put a layer of frosting between the two rounds and then frost the top and sides, decorate as you please, slice and enjoy!
