These Healthy Nutter Butters that are vegan + gluten free are EXTREMELY addictive and definitely designed to boost your serotonin:)
THE RECIPE
yields: 14 cookies
prep time: 10 min
cook time: 12 min
total time (including cooling): 32 min
Ingredients:
1 flax egg (1 tbsp ground flax + 3 tbsp water, mix, + let sit for 10 min)
1/4 cup melted coconut oil
1 tsp vanilla
1/3 cup coconut sugar
1/3 cup maple syrup
1/2 cup creamy peanut butter
1 2/3 cup almond flour
6 tbsp coconut flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Filling: extra about 1/3 cup peanut butter + optionally a couple tbsp of mini chocolate chips
Instructions:
1. Preheat oven to 350 and grease or line 2 baking sheets, set aside
2. I’m a large bowl, mix together the flax egg, coconut oil, vanilla, coconut sugar, maple syrup, and creamy peanut butter
3. Add in the almond flour, coconut flour, baking soda, baking powder, and salt and mix until combined.
4. Make roughly 28 small balls out of the dough and gently press two of them togeteher on the baking sheet, then with a fork give them the little criss cross pattern on top (by pressing them 1 way and then the next) do this to all of the dough, so you should have about 14 cookies and bake in the oven for 12-13 minutes and cool for 10
5. Using peanut butter sandwich two of the cookies together with a spoonful of peanut butter and optionally sprinkle in a few chocolate chips, and repeat this until you have 7-8 cookie sandwiches, store in room temp/the fridge for up to 5 days, and enjoy!
