Healthy Peanut Butter Coconut Chocolate Cookies (Vegan & Gluten Free)

These are absolutely splendid, chewy, and to quote my dear friend Rachel "Incredible." Rachel is the most honest person I know, TRUST RACHEL and make the recipe pretty please. It's unbelievable.

These cookies are full of healthy fats, which are sooooo good for us and make us sooo happy! Cookies also make us happy, so if you're in a rough mood... make these cookies to booooost it up!!



THE RECIPE

yields: 18-20 cookies

prep time: 10 minutes

cook time: 15 minutes

total time: 25 minutes

Ingredients:

1 flax egg

1/2 cup peanut butter

1/3 cup coconut sugar

2 tbsp maple syrup

1 tsp vanilla extract

1 2/3 cup blanched almond flour

2 tbsp coconut flour

1/2 tsp baking soda

1 tsp salt

1/2 cup chopped coconut flakes

Instructions:

1/2 cup chocolate chips

1/2 tbsp coconut oil

Extra salt to sprinkle

Preheat oven to 350 and line a baking sheet with reusable parchment or grease it with coconut oil In a large bowl mix together the flax egg, peanut butter, coconut sugar, maple syrup, and vanilla Next add in the almond flour, coconut flour, baking soda, and salt. Then add in the coconut flakes With a small-medium cookie scoop, place the cookies on the sheet and press with your fingers until they are about 1 inch thick, don’t worry too much about space as they don’t spread too much (recipe makes 18-20) Bake them in the oven for 12-15 minutes While the cookies are cooling in 30 second increments melt together the chocolate chips and coconut oil. Once cookies have cooled for 10 minutes, remove from the cookie sheet and place 1/2 tbsp of melted chocolate onto the top, spreading over the surface. Sprinkle with sea salt, let chocolate harden, and enjoy!!
