These cookies are chewy + soft, with crisp edges and the peanut butter white choc combo in them is out of this world!
THE RECIPE
yields: 21 cookies

cook time: 10 mins
total time (including cooling): 30 mins
Ingredients:
1 flax egg (1 tbsp ground flax seed + 3 tbsp water, mix, + let sit for 10 min)
1/4 cup melted coconut oil
1/2 cup creamy peanut butter
1/2 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla
1 cup almond flour
2 tbsp coconut flour
1 tsp baking soda
1 tsp salt
1/2 cup vegan white chocolate chips
Instructions:
1. Preheat oven to 350 F and grease or line 2 baking sheets, set aside
2. In a large bowl mix together the flax egg, melted coconut oil, peanut butter, coconut sugar, maple syrup, and vanilla
3. Then add in the almond flour, coconut flour, baking soda, and salt. Then stir in the whites chocolate chips.
4. Place the batter with a small/medium cookie scoop onto the baking sheets and bake in the oven for 10-11 minutes, let cool for 10, and enjoy! (recipe makes 20-21 cookies)
