Healthy Pumpkin Oatmeal Chocolate Chip Cookies (vegan + gf)

chewy cookies w a slightly crisp outside, bits of melted choc and oats throughout, and the taste of fall in every bite:)


these cookies have an insane texture and the perfect amount of pumpkin taste to them


theyre also extremely simple to make and leave your kitchen smelling AMAZING

THE RECIPE:

yields 14-17 cookies

prep time: 10 min

cook time: 14 min

total time (including cooling): 34 min

ingredients

1/4 cup melted coconut oil

6 tbsp almond butter

1/3 cup pumpkin purée

2 tbsp non dairy milk

1/2 cup coconut sugar

1 tsp vanilla

3/4 cup almond flour

1/4 cup gf oat flour (1/4 cup blended gf oats)

3/4 cup gf oats

1 1/2 tsp pumpkin pie spice

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and line or grease a cookie sheet

*in a large bowl mix together the coconut oil, almond butter, pumpkin purée, non dairy milk, coconut sugar, and vanilla

*add in the almond flour, flour, oats, baking soda, baking powder, and salt. then add in the chocolate chips

*place the dough evenly onto the cookie sheet, bake in the oven for 14-15 min, let cool for 10, and enjoy!
