These cookies are soft, chewy and perfect for the holidays! They're a real crowd pleaser and I've had many people tell me that they can't believe these are vegan AND paleo!


THE RECIPE:
yields: 15 cookies
prep time: 10 min
cook time: 15 min
total time (including cooling): 35 min
Ingredients:
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 5-10 min)
2 tbsp melted coconut oil
1 tsp vanilla
1/3 cup coconut sugar
3 tbsp maple syrup
2 tbsp nut or seed butter
1 cup almond flour
2 tbsp coconut flour
3 tbsp cacao/cocoa powder
2 1/2 tbsp beet root powder (sift into mixture or there will be clumps :(
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/2 cup vegan white chocolate chips (I used “Dee Best” from Amazon, can be paleo depending on what type of chips you use!)
Instructions:
Preheat oven to 350 F and line or grease a baking sheet, set aside
In a large bowl mix together the flax egg, coconut oil, vanilla, coconut sugar, maple syrup, and nut or seed butter
Then add in the almond flour, coconut flour, cocoa powder, beet root powder, baking soda, salt, and baking powder. Then add in the white chocolate chips
Using a small/medium cookie scoop, place the dough onto the cookie sheet (leaving room so they won’t touch as they spread out) and bake for 14-15 minutes, let cool for 10, and enjoy!
