Healthy Salted Caramel Cookie Dough Loaf (paleo + vegan)

This loaf is crisp and chewy on the outside, and soft and melty on the inside! The perfect combo of you ask me! ;)





THE RECIPE:

yields: about 9-10 slices

prep time: 10 min

cook time: 50 min

total time (including cooling): 1 hr 25 min

Ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 5-10 min)

1/4 cup melted coconut oil

1/2 cup coconut sugar

1 tsp vanilla

1/4 cup non dairy milk

1/3 cup almond butter

1 cup + 2 tbsp almond flour (I plan to test this out later in the week with oat flour and I’ll let you guys know if it turns out!)

2 tbsp coconut flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt (plus more for topping)

1/2 tbsp maca powder (optional)

1/2 cup chocolate chips

Instructions:

1. Preheat oven to 350 F and line a loaf pan with parchment paper, set aside

2. In a large bowl mix together the flax egg, coconut oil, coconut sugar, vanilla, non-dairy milk, and almond butter

3. Then add in the almond flour, coconut flour, baking soda, baking powder, salt, and maca powder until smooth

4. Then add in the chocolate chips and pour mixture into the loaf pan, bake for 45-50 minutes, let cool for 25 before slicing, and enjoy!
