Healthy Salted Peanut Butter Oatmeal Chocolate Chip Cookies (vegan + gf)

peanut butter w rich chocolate chips, flaky sea salt, and an insane chewy/fluffy texture from the oats:)


these cookies are 1. insanely addictive 2. ridiculously simple (literally only 9 ingredients make them RN) and 3. tasty as hell





THE RECIPE:

yields 15 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min

ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1/2 cup coconut sugar

1/3 cup peanut butter

1 tsp vanilla

1 1/4 cup gf oat flour (1 1/4 cup blended gf oats)

1/2 cup gf oats

1 tsp baking soda

1 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and line or grease a baking sheet

*in a large bowl mixed together the flax egg, coconut oil, coconut sugar, peanut butter, and vanilla

*add in the oat flour, oats, baking soda, and salt. then add in the chocolate chips

*use a small/medium cookie scoop and place the batter evenly spaced onto the pan, bake in the oven for 11 min, let cool for 10, and enjoy!
