Healthy Samoa Chocolate Chip Cookies (Paleo & Vegan)

Think Samoas, but different for these chewy chocolate chip cookies! They’re extremely nutty, super simple, and have the meltiest chocolate chips!!




THE RECIPE:

yields: 12-14 cookies

prep time: 10 minutes

cook time: 20 minutes

Ingredients:

1 flax egg

1/4 cup peanut butter

1/4 cup coconut sugar

1/4 cup maple syrup

1 tsp vanilla

1/4 cup any milk you want:)

1 cup almond flour

1 tsp baking powder

1/2 tsp salt

1/2 cup coconut shreds

1/2 cup chocolate chips

Instructions:

1. Preheat oven to 350 and line or grease a baking tray

2. In a large bowl mix together the flax egg, peanut butter, coconut sugar, maple syrup, vanilla, and milk

3. Stir in the almond flour, baking powder, and salt. Then add in the coconut shreds and chocolate chips

4. Take large spoonfuls of the dough and place them onto the cookie sheet, bake in the oven for 16-20 minutes, let cool for 15 minutes, remove from the tray, and enjoy!!
