Healthy Snickers Brownies w Date Caramel (vegan + gf)

chewy brownies topped with date caramel, crunchy peanuts, and hardened choc


these are absolutely amazing and have the best flavor combos that make them extremely addictive


i did, in fact, go around my house and make every member of my family taste these and give their stamp of approval so uk they’re legit:)





THE RECIPE:

yields: 12-14 brownies

prep time: 15 min

cook time: 24 min

total time (including cooling): 44 min

ingredients

for the brownies-

1/4 cup melted coconut oil

1/3 cup creamy peanut butter

1/2 cup coconut sugar

1/4 cup non dairy milk

2 tbsp maple syrup

1 tsp vanilla

1 1/2 cup almond flour

1/3 cup cacao/cocoa powder

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

for the date caramel peanut layer-

1/3 cup date spread (blend together 6 medium/large dates -soaked in warm water for 5 min and drained- until smooth)

1/4 cup creamy peanut butter

heaped 1/3 cup chopped peanuts

for the choc topping-

1/3 cup + 1 tbsp chocolate chips

1 tbsp coconut oil

instructions

*preheat oven to 350 F and line a 9x9 baking tin, set aside

*for the brownies- in a large bowl mix together the coconut oil, peanut butter, coconut sugar, non dairy milk, maple syrup, and vanilla

*then mix in the almond flour, cacao powder, baking soda, and salt. then add in the chocolate chips. pour the batter into the pan and bake for 24 min, let cool

*for the date caramel peanut layer- blend together the date spread and peanut butter until completely smooth (if your blender isn’t strong enough mash thoroughly with a fork) and then stir in the chopped peanuts.

*spread the date caramel evenly over the brownies (it will be quite thick so you can flatten it out with a roller or your hands before you spread it if easiest), set aside

*for the choc topping- in a small bowl in the microwave in 30 second increments, mixing in between, melt together the chocolate chips and coconut oil until smooth then pour over the caramel and brownies, place in fridge to harden for 10 min, slice, and enjoy!
