i’ve also been obsessed with lentil pasta lately (kinda superior to chickpea not gonna lie, I just love the texture) so I decided to share a variation of one of my fav super simple + quick lunch/din recipes with y’all!!


THE RECIPE:
yields: 2-4 servings
prep time: 10 min
cook time: 10 min
total time (including cooling): 20 min
Ingredients:
1 box red lentil pasta (can sub other)
a couple handfuls chopped broccoli
a couple tbsp hummus
1-2 tbsp olive oil
garlic powder, salt, pepper to taste
nutritional yeast
chickpeas
spinach
Instructions:
1. cook pasta according to packaging and steam broccoli (I either cook the broccoli with the pasta or put a strainer on top, cover it, and cook it that way)
2. drain it and mix in the hummus, olive oil, seasonings, and nutritional yeast until the pasta is coated
3. add in the steamed broccoli if you haven’t yet and place in a bowl with fresh spinach, lemon juice, and some chickpeas on top, serve warm!!
