This loaf is sweet and dense with a crisp outer layer that’s to die for!
THE RECIPE
yields: 8 slices
prep time: 10 minutes
cook time: 40 minutes
total time (including cooling): 1 hr 20 min
Ingredients:
2 flax eggs (2 tbsp ground flax & 5 tbsp water, mix together and let sit for 10 min)
1/3 cup melted coconut oil
1/2 cup peanut butter
1/3 cup coconut sugar
3-4 tbsp maple syrup
1 tsp vanilla
1/3 cup milk of choice
1 2/3 cup *gf* oat flour (1 2/3 cup ground gf oats)
1 tsp salt
1 tsp baking soda
1/2 baking powder
For the choc half:
1/4 cup cacao powder
1/4 cup milk of choice
A handful chocolate chips
Instructions:
1. Preheat oven to 350 F and grease a loaf pan, set aside
2. In a medium bowl, mix together the flax eggs, coconut oil, peanut butter, vanilla, and milk
3. Add in the oat flour, salt, baking soda, and baking soda, set aside
4. Grab another medium bowl and pour half the batter into it. Mix the cacao powder and milk into the bowl
5. In the loaf pan, layer the two batters alternating chocolate then peanut butter by placing the batter into the middle each time (I fit 6 times into mine!)
6. Add a few chocolate chips on top and place in the oven for 40-45 minutes, let cool for 30, and enjoy with some ice cream!
