Mint Chocolate Chip Blondies (paleo + vegan)

fudgy, chewy, mint choc filled goodness


these bars are rich, gooey, and extremely simple to make! i’m just saying if you headed to your kitchen right now you could have these in less than an hour





THE RECIPE:

yields: 12 bars

prep time: 10 min

cook time: 34 min

total time (including cooling): 1 hr

ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1 tsp vanilla

1/2 tsp peppermint extract

1/3 cup coconut sugar

2 tbsp maple syrup

3 tbsp non dairy milk

1 cup almond flour

2 tbsp coconut flour

1/2 tsp salt

1 tsp baking soda

1-2 tsp natural green powder (for color, like a smoothie greens powder etc, optional)

1/2 cup chocolate chips

instructions:

*preheat oven to 350 F and line or grease a 9x9 baking tin, set aside

*in a large bowl mix together the flax egg, coconut oil, vanilla, peppermint, coconut sugar, maple syrup, and non dairy milk

*then add in the almond flour, coconut flour, salt, baking soda, and green powder. then add in the chocolate chips

*spread the mixture into the tin and bake for 33-35 min, let cool for 15, slice, and enjoy!
