Mint Chocolate Chip Cookie Brittle (vegan + paleo)

chewy, simple, and perfect for the holidays!




THE RECIPE:

yields 12 pieces

prep time: 10 min

cook time: 35 min

total time (including cooling): 55 min

ingredients

3 tbsp chocolate (melted in the microwave with 1/2 tbsp coconut oil until smooth)

mini flax egg (mix 1/2 tbsp ground flax seed & 1.5 tbsp water and let sit for 5 minutes)

2 tbsp maple syrup

2 tbsp almond butter

1/4 cup + 2 tbsp coconut sugar

1/4 cup milk of choice

1/2 tsp vanilla

1/4 tsp peppermint extract

1/4 cup + 2 tbsp almond flour

2 tbsp coconut flour

1/2 tsp salt

1/2 tsp baking powder

chocolate chips for topping

instructions

1. Preheat oven to 350 and grease an 8x8 pan, set aside

2. In a medium bowl mix together the chocolate, flax egg, maple syrup, almond butter, coconut sugar, milk, and vanilla

3. Then add in the almond flour, coconut flour, salt, and baking powder

4. Pour the batter into the lined pan and shake until it’s spread evenly and bake in the oven for about 35 minutes, top with a few chocolate chips, let cool for 10 min, cut into 12 squares and enjoy:)
