Oatmeal Chocolate Chip Cookie Skillet (vegan + gluten free)

a fudgy, chewy oatmeal cake filled w melted chocolate chips



an insanely amazing, one-bowl sweet treat/snack to make your day 10x better



can be cut up or dug into with spoons, but definitely should be eaten w some ice cream on top:)


THE RECIPE:

yields 7-9 servings

prep time: 10 min

cook time: 25 min

total time (including cooling): 50 min

ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 5 min)

1/4 cup melted coconut oil

1/2 cup cashew butter (can sub other nut or seed butter)

1/2 cup coconut sugar

2 tbsp maple syrup

1 tsp vanilla

1/3 cup non dairy milk

1 1/4 cup gf oat flour (1 1/4 cup blended gf oats)

1/2 cup gf oats

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and grease a 9x9 circular pan

*in a large bowl mix together the flax egg, coconut oil, cashew butter, coconut sugar, maple syrup, vanilla, and non dairy milk

*add in the oat flour, oats, baking soda, baking powder, and salt. then add in the chocolate chips

*pour the batter into the pan, top with a few more chocolate chips, bake for 25-27 mins, let cool for 15, top with a vegan vanilla ice cream of your choice, and enjoy!
