olive oil in baked goods may sound wrong but the way it brings out the flavors of the chocolate is extremely fab and the flavor is not overpowering at all
there’s nothing quite like a good blondie to switch it up from the classic brownie now and then:)
THE RECIPE:
yields: 12 bars
prep time: 10 min
cook time: 25 min
total time (including cooling): 45 min
ingredients
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 5 min)
1/3 cup almond butter (can sub any nut or seed butter)
1/3 cup olive oil
1/2 cup coconut sugar
6 tbsp non dairy milk
1 tsp vanilla
1 1/2 cup almond flour
2 tbsp coconut flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
instructions
*preheat oven to 350 F and line or grease a 9x9 baking tin
*in a large bowl mix together the flax eggs, almond butter, olive oil, coconut sugar, non dairy milk, and vanilla
*add in the almond flour, coconut flour, baking soda, and salt. then add in the chocolate chips
*spread the mixture into the tin and bake for 24-27 min, let cool for 10, slice, and enjoy!
