a fudgy brownie base, date caramel center, toasted coconut top, and hardened chocolate drizzle

THE RECIPE:
yields: 12 brownies
prep time: 15 min
cook time: 25 min
total time (including cooling): 50 min
ingredients
for the brownies-
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)
1/4 cup melted coconut oil
1/4 cup coconut sugar
1/4 cup maple syrup
1/4 cup nut or seed butter (i recommend cashew, almond, or sunflower)
1/4 cup non dairy milk
1 tsp vanilla
1 1/4 cup almond flour
1/3 cup cacao/cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
for the date caramel-
1/3 cup date spread (blend together 6 medium/large dates -soaked in warm water for 5 min and drained- until smooth)
1/4 cup creamy nut or seed butter
for the coconut layer-
2/3 cup toasted coconut shreds (bake shredded coconut in the oven at 350 F for 5-6 ish min)
for the choc topping-
1/4 cup + 1 tbsp chocolate chips
1 tbsp coconut oil
*preheat oven to 350 F and line or grease a 9x9 baking tin, set aside
*for the brownies- in a large bowl mix together the flax egg, coconut oil, coconut sugar, maple syrup, nut or seed butter, non dairy milk, and vanilla
*add in the almond flour, cacao powder, baking soda, and salt. then add in the chocolate chips
*pour the mixture into the tin and bake in the oven for 25 min, let cool
*for the date caramel- blend together the date spread and nut or seed butter until completely smooth (if your blender isn’t strong enough mash thoroughly with a fork)
*spread the date caramel evenly over the brownies (it will be quite thick so you can flatten it out with a roller or your hands before you spread it if easiest)
*for the coconut layer- sprinkle the coconut generously over the caramel layer and use your hands to press it into the surface, set aside
*for the choc topping- in a small bowl in the microwave in 30 second increments, mixing in between, melt together the chocolate chips and coconut oil until smooth then drizzle lightly over the caramel and brownies, place in fridge to harden for 10 min, slice, and enjoy!
