Peanut Butter Chocolate Chip Cookies (vegan + gf)

chewy, delectable, and oh so mouthwatering

classic choc chip cookies with an amazing pb twist, basically everything you could ever want in one:) melty chocolate chips, with a slight saltiness, and a bit of crunch

plus they have crunchy peanuts throughout which take the texture to a whole new level:)

i will never get over putting peanut butter and chocolate together in different forms so y’all are just gonna have to go with me here<3


yields: 17-20 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min


1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1/3 cup creamy peanut butter

2 tbsp non dairy milk

1 tsp vanilla

1 2/3 cup almond flour

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

1/4 cup chopped peanuts (optional)


*preheat oven to 350 F and line or grease 2 baking sheets, set aside

*in a medium bowl mix together the flax egg, coconut oil, peanut butter, non dairy milk, and vanilla

*then add in the almond flour, baking soda, and salt. then stir in the chocolate chips and chopped peanuts

*using a small/medium cookie scoop, place the dough evenly onto the cookie sheets, bake in the oven for 11 min, let cool for 10, and enjoy (preferably with some oat milk or vegan ice cream tbh;))
