Peanut Butter Cup Stuffed Brownie Cups (vegan + gluten free)

a fudgy on the inside, crisp on the outside brownie with a melty chocolate pb cup in the center


yields 7-8 brownies

prep time: 10 min

cook time: 20 min

total time (including cooling): 45 min


1/4 cup melted coconut oil

1/4 cup peanut butter

3 tbsp maple syrup

1/3 cup coconut sugar

2 tbsp non dairy milk

1 tsp vanilla

1 cup almond flour

1/3 cup cacao/cocoa powder

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips

7-8 peanut butter cups (1 per brownie, for stuffing, i used @unreal.snacks )


*preheat oven to 350 F and line a cupcake tin with 7/8 liners

*in a medium bowl mix together the coconut oil, peanut butter, maple syrup, coconut sugar, non dairy milk, and vanilla. then add in the almond flour, cacao powder, baking soda, and salt. then stir in the chocolate chips

*divide about 3/4 of the batter evenly amongst the liners and place the peanut butter cups in the middle of each brownie. press down on each pb cup and cover each brownie with the remaining batter. bake for 20 min, let cool for 15, and enjoy!
