Peanut Butter Oatmeal Chocolate Chip Cookies (Vegan & Gluten Free)

These are the holy grail of cookies, I kid you not. They are so dreamy, extremely simple, and deliciously chewy:) In other words, these don't last more than two days in my house!! They are simply amazing and definitely a must-try!

-Absolutely AMAZING & Take only 10-15 minutes!


So... What's not to love?




Possible Q's:


Can I sub the maple syrup for something else? Yes! Any other liquid sweetener such as honey, date syrup, or rice malt syrup will work!


Almond Flour Subs? No unfortunately almond flour is really specific and I haven't tested any other flours for this recipe thus far.


Can I sub arrowroot flour for the tapioca starch? Yes, absolutely!


Why haven't I made these cookies yet? I honestly do not know, but if you hurry and make them now I can guarantee that all your problems will be solved!




When I was little and my mom would bake cookies, I only remember her making oatmeal chocolate chip, which is probably why they are my favorite... and for good reason. Little did I know at the time that these cookies she was making included some healthy ingredients! Which is sooo uncommon in my family, let me tell ya.


She told me not too long ago that she snuck things like flax seeds, chia seeds, and a few other healthy ingredients into the cookies without telling us... Now everything I bake is made with simple, nourishing ingredients and you cannot tell that my treats are healthy:)


Sooo basically these cookies are healthy, nutritious, extremely delicious, and everything that you could want all rolled into one.... run to the kitchen my friends and partake in one of the simple pleasures of life, an amazing cookie!


THE RECIPE:

yields: 15-16 cookies

prep time: 10 minutes

cook time: 10 minutes

total time: 20 minutes

Ingredients: 1 flax egg 1/2 cup coconut sugar 1/2 cup peanut butter 1 tsp vanilla 2 tbsp maple syrup 3/4 cup almond meal 1 tsp baking soda 1/4 cup tapioca flour 1/2 tsp salt 1/2 cup oats 1/2 cup chocolate chips Instructions: 1. Preheat oven to 350, and line two baking sheets with reusable parchment paper/silicone mats 2. In a large bowl, mix together the flax egg, coconut sugar, peanut butter, vanilla, and maple syrup until combined 3. Add in the almond meal, baking soda, tapioca flour, salt, and oats and mix 4. Once combined fold in the chocolate chips!! 5. Take a medium to small cookie scoop and place them on the cookie sheet, bake for 10 minutes (they will still be soft), let cool for 10 minutes, and enjoy!!
