Peanut Butter Oreo Chocolate Chip Cookies (vegan + gf)

like everything that’s good abt life rolled into 1




THE RECIPE:

yields 12 cookies

prep time: 10 min

cook time: 12 min

total time (including cooling): 32 min

ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 10 min, can sub normal egg)

2 tbsp melted coconut oil

1/4 cup peanut butter

1/2 cup coconut sugar

1 tsp vanilla

1 cup blanched almond flour (can sub 1 cup gf oat flour/ 1 cup blended gf oats)

1/2 tsp salt

1/2 tsp baking soda

2 tbsp coconut flour

1/2 cup chocolate chips

6 gluten free oreos halved (or 12 full oreos)

instructions

*preheat oven to 350 F and prepare a baking sheet, set aside

*in a large bowl, mix together your flax egg, coconut oil, peanut butter, coconut sugar, and vanilla extract

*stir in the almond flour, salt, baking soda, and coconut flour. once combined, add in your chocolate chips

*roll the dough into balls and place evenly onto the baking sheet. press an oreo (or half an oreo) into the top of each cookie, bake in the oven for 10-12 minutes, let cool for 10, remove from the baking sheet, and enjoy!
