S'mores Cookies (Vegan & Paleo)

They’ve got a crispy s‘ more-like outside with chewy vegan marshmallows and melted chocolate chips on the inside🤤🤤



THE RECIPE

yields: 15-17 cookies

prep time: 1o min

cook time: 15 min

total time (including cooling): 35 min

Ingredients:

2 flax eggs (2 tbsp ground flax seed + 5 tbsp water, mix, & let sit for 15 min)

1/2 cup coconut sugar

3 tbsp melted coconut oil

1 tsp vanilla

2 tbsp cashew butter (can sub other nut butter)

2 tbsp maple syrup/honey

1/2 cup + 2 tbsp coconut flour

1/2 cup almond flour

1 tsp baking soda

1/2 tsp salt

1/3 cup (mini) chocolate chips

1/3 cup vegan marshmallows (I used@mydandies)

Instructions:

1. Preheat oven to 350 F and line or grease 2 baking sheets, set aside

2. In a large bowl mix together the flax eggs, coconut sugar, coconut oil, vanilla, cashew butter, and maple syrup

3. Add in the coconut flour, almond flour, baking soda, and salt. Then add in the chocolate chips and marshmallows.

4. Use a small/medium cookie scoop and place the dough on to the sheets, then give them a little *pat pat* so they’re more cookie shaped, bake in the oven for 13-15 minutes (will still be soft when they come out of the oven), let cool for 10, and enjoy!
