Salted Caramel Cookie Brittle (Vegan & Paleo)

With chocolate chips or without, this SALTED CARAMEL COOKIE BRITTLE is still one of my favorite thing ever!


You've got the vegan & non-vegan stamp of approval on this one! Meaning my brothers and my friend Kate:)




THE RECIPE

yields: 16 bars (2 8x8 pans worth)

prep time: 10 minutes

cook time: 30 minutes

total time (including cooling): 50 minutes

Ingredients:

1 flax egg (1 tbsp ground flax seed & 2.5 tbsp water mixed, let sit for 10 minutes)

1/4 cup maple syrup

1/4 cup almond butter

3/4 cup coconut sugar

1/2 cup milk of choice

1 tsp vanilla

1 cup almond flour

1/4 cup coconut flour

1 tsp salt

1 tsp baking powder

Sprinkle of salt

Optional chocolate chips for topping

Instructions:

1. Preheat oven to 350 and grease two 8x8 pans, set aside

2. In a large bowl mix together the flax egg, maple syrup, almond butter, coconut sugar, milk, and vanilla

3. Then add in the almond flour, coconut flour, salt, and baking powder

4. Pour half of the batter into each pan and shake until it’s spread evenly and bake in the oven for 26-34 minutes, top with a few chocolate chips & a sprinkle of salt, let cool for 10, cut into 8 squares and enjoy:)


Notes:

-you can easily cut this recipe in half and put it into one 8x8 pan, for the flax egg just do 1/2 tbsp ground flax and 1.5 tbsp water!
